Comforting, creamy and full of flavour, this garlic chicken dish is paired with sweet roasted cherry tomatoes and a rich parmesan sauce that’s perfect for an easy family dinner.

Chicken
Ingredients:
- 4 Craig Cook chicken breast fillets
- 2 tbsp olive oil
- Salt and cracked pepper
- 2 garlic cloves, minced
- 1 tbsp paprika
Method:
- Preheat oven to 200°C.
- Season chicken breast fillets with salt, cracked pepper and paprika.
- Heat olive oil in a large frying pan over medium high heat.
- Cook chicken for 4–5 mins per side until golden.
- Transfer chicken to a baking dish and finish in the oven for 10 mins or until cooked through.
Creamy Garlic Sauce
Ingredients:
- 2 tbsp butter
- 3 garlic cloves, minced
- 1 cup thickened cream
- ½ cup grated parmesan cheese
- ½ cup chicken stock
- Salt and cracked pepper
- 1 tbsp chopped parsley
Method:
- Using the same pan, melt butter over medium heat.
- Add garlic and cook for 1 min until fragrant.
- Pour in chicken stock and cream, stirring well.
- Add parmesan cheese and simmer gently for 3–4 mins until thickened slightly.
- Season with salt and cracked pepper, then stir through parsley.
Roasted Cherry Tomatoes
Ingredients:
- 250g cherry tomatoes
- 1 tbsp olive oil
- Salt and pepper
Method:
- Place cherry tomatoes onto a baking tray.
- Drizzle with olive oil and season with salt and pepper.
- Roast at 200°C for 10–12 mins until softened and slightly blistered.
Plating & Tips
Serve chicken generously coated in creamy garlic sauce with roasted cherry tomatoes spooned over the top.
Pair with mashed potatoes, steamed greens or crusty bread to soak up the sauce.

Avoid overcooking chicken breast by resting it for a few minutes before serving to keep it tender and juicy.
