A vibrant twist on a BBQ classic - juicy beef sausages paired with a fresh, zesty salsa of sweet roasted capsicum, ripe tomatoes and a touch of tangy capers.

Ingredients:

Method:
Preheat your barbecue grill or flat plate to a moderate heat.
Cut the links between the sausages but don’t pierce them – this keeps in all the moisture and flavour.
Grill the sausages slowly over moderate heat, turning regularly with tongs until evenly browned and cooked through to the centre.

Capsicum & Tomato Salsa

Ingredients:

  • 2½ roasted red capsicums, chopped

  • 2½ roasted green capsicums, chopped

  • 6 cherry tomatoes, finely chopped

  • 1 tbsp chopped capers

  • 2 tsp red or white wine vinegar

Method:
In a bowl, combine the roasted capsicums, cherry tomatoes, capers and vinegar.
Toss gently and set aside while sausages cook.

Plating & Tips

Serve the sausages hot from the barbecue with a generous spoonful of the fresh salsa over the top.

Cooking Tip:
For the juiciest sausages, never prick them before or during cooking. Slow, even cooking over moderate heat ensures they stay plump and full of flavour without splitting the skins.
